Pineapple Mojito

This pineapple mojito may just be the freshest cocktail you’ll try this year. This recipe makes 4 servings.


Ingredients: 250g chopped pineapple (we think tinned is best), 4tbsp caster sugar, 4 juiced limes, 200ml white rum, 200ml soda water, handful of basil or mint leaves (whichever you prefer!).


Method: Muddle together the pineapple, sugar and basil/mint leaves in a jug. Add the lime juice and mix. Divide between 4 tall glasses and add ice, add 50ml rum to each. Top up with the soda water and decorate with any leftover mint/basil and lime. 


Coconut Sunset

A quick and easy recipe that can be put together in seconds, you might just drink it as quick as you can make it! This recipe caters for individual glasses, make separately to get a layered effect.


Ingredients: 4 measures pineapple juice, 2 measures coconut rum or Malibu, grenadine syrup, glacé cherries to decorate.


Method: Fill a highball glass with ice. Pour a splash of grenadine into the bottom of the glass. Pour in the pineapple juice, then the rum, decorate with cherries or even a pineapple wedge if you’re feeling fancy.


Strawberry Margarita

A juicy spin on the classic, perfect for fun-filled summer evenings. This recipe serves 2.


Ingredients: Half a punnet of sliced fresh strawberries, 2tsp granulated sugar, 4 measures of tequila, 2 measures triple sec, 2 measures orange juice, 1 measure lime juice, 1 measure simple syrup. 


Method: Slice the strawberries and place in a bowl. Sprinkle the granulated sugar and stir, let these sit for around 15 minutes. Then, add this to your cocktail shaker, crush the strawberries to get as much juice out as you can. Pour the tequila, triple sec, lime juice and orange juice into the shaker. Drizzle in the simple syrup (or add runny honey if you don't have any). Meanwhile, rim your cocktail glasses with a mixture of salt and sugar, use some lime juice to get it to stick. Add ice. Then, fill the cocktail shaker with ice and shake vigorously for 30 seconds. Strain into your glasses, garnish with any leftover strawberries or limes, serve immediately.


Fruity White Sangria

This is like red wine sangria’s sister, it’s the same, but different, and a whole lot more refreshing. This recipe makes 6 servings.


Ingredients: 1 bottle of your favourite white wine, a splash of brandy, lemon and lime soda, granulated sugar, orange juice, 1 apple, 1 lemon, 1 lime, 1 peach, a handful of strawberries, fresh mint.


Method: Peel de-seed and finely dice the peaches, in a jug or pitcher, add orange juice, 4 tsp granulated sugar and a splash of brandy, crush together with the peaches. Chop the following into thin slices and add to the pitcher: lemon, lime, apple. Pour in the entire bottle of white wine and leave to refrigerate from 4, up to 24 hours. Just before serving, add the strawberries (sliced) and a handful of mint. Empty into individual glasses and top up with lemon and lime soda water.


Blueberry Vodka Lemonade

A bit of a change to your classic lemonade recipe. This recipe creates one serving, repeat as many times as needed to serve up more, or create this mix inside a pitcher for larger gatherings.


Ingredients: Blueberry syrup (homemade or shop-bought), lime juice, vodka, lemonade.


Method: Add a generous splash of blueberry syrup into the bottom of a cocktail shaker, squeeze the juice of half a lime and add a double serving of vodka. Shake until combined and pour over ice-filled glasses. Top each glass with lemonade (we recommend a cloudy lemonade but it’s completely down to you!). Garnish with fresh blueberries and lemon if you wish.
